Tuna Preparation

Brussels Sprouts

Method

Tuna Preparation

1

Marinate the Tuna

In a bowl, mix soy sauce and sesame oil. Place the tuna steaks in the marinade and let them sit for at least 15 minutes.

2

Crust the Tuna

Once marinated, remove the tuna from the marinade and coat each side with sesame seeds evenly.

Brussels Sprouts

3

Prepare and Roast Brussels Sprouts

Trim the ends of the Brussels sprouts and cut them in half. In a bowl, toss them with olive oil, salt, and pepper. Spread on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes or until crispy and golden.

Slaw

4

Prepare the Slaw

In a large bowl, combine shredded cabbage, carrot, and sliced green onions. In a small bowl, whisk together rice vinegar, sugar, sesame oil, and salt. Pour over the cabbage mixture and toss to combine. Let sit for at least 10 minutes.

Cooking Tuna

5

Sear the Tuna

Heat a non-stick skillet over medium-high heat. Sear the sesame-crusted tuna for about 2-3 minutes on each side for medium-rare, or until your desired doneness.

Serving

6

Plate the Dish

On a plate, serve the roasted Brussels sprouts alongside sliced seared tuna. Top with Asian slaw, and garnish with pickled ginger and a dollop of wasabi.
