Preparing the Mashed Potatoes

Boil the Potatoes

Place the peeled and cubed russet potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce to medium heat and simmer for about 15-20 minutes or until the potatoes are fork-tender.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add the butter, milk, salt, and black pepper. Mash the potatoes until smooth and creamy. Adjust seasoning if necessary and keep warm.

Making the Gravy

Prepare the Roux

In a medium saucepan, melt 2 tablespoons of butter over medium heat. Once melted, add 2 tablespoons of all-purpose flour. Whisk continuously for about 2 minutes until the mixture turns a light golden brown.

Add the Beef Broth

Gradually add the beef broth to the roux while whisking to prevent lumps. Increase the heat to medium-high and bring the mixture to a simmer. Cook for about 5-7 minutes until the gravy thickens.

Season the Gravy

Season the gravy with salt and black pepper to taste. Remove from heat and set aside.

Assembling the Dish

Prepare the Prime Rib

Heat a skillet over medium heat. Add the shaved prime rib and sauté for 2-3 minutes until heated through. Do not overcook.

Plate the Dish

On a plate, scoop a generous serving of mashed potatoes. Top with the sautéed prime rib and drizzle with the prepared gravy. Serve immediately.
