Lemon Sherbet Preparation

Make the Lemon Base

Combine the fresh lemon juice, sugar, water, lemon zest, and a pinch of salt in a saucepan. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let it cool.

Chill the Mixture

Once cool, transfer the lemon mixture to a container and refrigerate for at least 2 hours to chill thoroughly.

Freeze the Sherbet

Pour the chilled lemon mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.

In a blender, combine the fresh raspberries, sugar, water, lemon juice, and a pinch of salt. Blend until smooth.

Strain the raspberry mixture through a fine-mesh sieve to remove the seeds. Press with a spatula to extract as much liquid as possible.

Refrigerate the strained raspberry mixture for at least 1 hour. Then pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.
