1. Prepare the Hominy
Rinse the dried hominy under cold water and soak it in water overnight. Drain and rinse before cooking.
2. Cook the Meat
In a large pot, add the diced pork shoulder and cover with chicken broth. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the meat is tender.
3. Add Ingredients
Once the meat is tender, add the soaked hominy, chopped onion, minced garlic, oregano, cumin, and chili powder. Stir to combine.
4. Simmer the Soup
Continue to simmer the soup for an additional 1 to 1.5 hours, or until the hominy is soft and the flavors meld together. Add salt and pepper to taste.
