In a bowl, combine the buttermilk, salt, black pepper, and cayenne pepper. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

In a separate bowl, mix the shredded cabbage, carrots, apple cider vinegar, honey, salt, and pepper to taste. Set aside to let the flavors meld.

Coat the Chicken
In a shallow dish, combine the flour, paprika, garlic powder, salt, and black pepper. Remove the chicken from the marinade, letting excess liquid drip off, then dredge each piece in the flour mixture until well coated.
