1. Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool slightly and mix in a tablespoon of rice vinegar.

While the rice cools, chop the lobster meat into bite-sized pieces, slice the avocado, and julienne the cucumber.
