Method

Preparation of Marinade

  1. 1

    Combine Marinade Ingredients

In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper until well combined.

  2. 2

    Marinate the Steak

Place the flank steak in a resealable plastic bag or shallow dish, pour the marinade over it, and ensure the steak is fully coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 2 hours.

Cooking

  1. 3

    Prepare Vegetables

While the steak is marinating, slice the bell peppers and onion into thin strips.

  2. 4

    Cook the Steak

Heat a grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill or pan-fry the steak for about 5-7 minutes on each side for medium-rare. Adjust time to your preference for doneness.

  3. 5

    Sauté Vegetables

In the same skillet or on the grill, add the sliced bell peppers and onion. Sauté for about 5 minutes until they are tender and slightly charred.

Assembly

  1. 6

    Slice the Steak

Once cooked, let the steak rest for 5 minutes before slicing it against the grain into thin strips.

  2. 7

    Assemble Fajitas

Warm the flour tortillas in a dry skillet or microwave. Layer the sliced steak, sautéed vegetables, and desired toppings (sour cream, guacamole, and salsa) onto each tortilla.
