Preparing Tortilla Chips

Cutting the Tortillas
Stack the corn tortillas and cut them into triangles. You can cut each tortilla into 6-8 wedges.

Frying the Chips
In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add a few tortilla triangles at a time. Fry until crispy and golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt to taste.

Preheat your oven to 350°F (175°C). On a large oven-safe platter or baking sheet, layer the fried tortilla chips evenly.

Adding Cheese
Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the chips.

Melting the Cheese
Place the platter in the preheated oven and bake for 10-15 minutes, or until the cheese is fully melted and bubbly.
