Steak

Beans and Rice

Method

Prepare the Steak

  1. 1

    Marinate the Steak

In a bowl, combine olive oil, garlic powder, cumin, salt, and black pepper. Rub the mixture all over the flank steak and let marinate for at least 30 minutes.

  2. 2

    Grill the Steak

Preheat the grill to medium-high heat. Grill the marinated flank steak for about 6-8 minutes on each side, or until it reaches your desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.

Prepare the Beans and Rice

  1. 3

    Sauté Onion and Garlic

In a pan over medium heat, add a little olive oil and sauté the chopped onion and minced garlic until they are soft and fragrant, about 3-4 minutes.

  2. 4

    Combine Beans and Rice

Add cooked rice, canned black beans (rinsed and drained), cilantro, lime juice, and salt to the pan. Stir to combine and heat through for another 5 minutes.

Assemble the Burritos

  1. 5

    Layer Ingredients

On each flour tortilla, layer some of the steak slices, the bean and rice mixture, shredded cheese, a dollop of sour cream, and salsa.

  2. 6

    Roll the Burrito

Fold in the sides of the tortilla and roll it tightly from the bottom up to enclose the filling. Repeat with remaining tortillas.

  3. 7

    Serve

Cut the burritos in half and serve warm with extra salsa on the side.
