Main Ingredients

Marinade

Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, combine olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Marinate the Chicken

Place chicken breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably for 1-2 hours.

Cooking

  1. 3

    Prepare the Grill

Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stove.

  2. 4

    Cook the Chicken

Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.

  3. 5

    Chop the Onions and Cilantro

While the chicken is grilling, finely chop the onion and cilantro. Set aside.

  4. 6

    Warm the Tortillas

On the grill or in a pan, warm the corn tortillas for about 30 seconds on each side, until they are pliable.

  5. 7

    Assemble the Tacos

Once the chicken is cooked, remove it from the grill and let it rest for a couple of minutes. Slice the chicken into strips. To assemble, place a few strips of chicken on each tortilla, top with chopped onions and cilantro.
