Preparation of Rice Mixture

    Rinse the Rice

    Place the long-grain white rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Soak the Rice

    In a large bowl, combine the rinsed rice with 4 cups of water and the cinnamon stick. Let it soak for at least 4 hours, preferably overnight.

Blending and Straining

    Blend the Mixture

    After soaking, remove the cinnamon stick and transfer the rice and soaking water to a blender. Blend on high until the rice is finely ground, about 1-2 minutes.

    Strain the Mixture

    Place a fine-mesh strainer or cheesecloth over a large bowl and pour the blended mixture through it. Use a spatula to press down and extract as much liquid as possible. Discard the remaining rice solids.

Finalizing the Horchata

    Add Milk and Flavorings

    To the strained liquid, stir in the evaporated milk, sweetened condensed milk, vanilla extract, ground cinnamon, and sugar to taste. Mix well to combine.

    Chill the Horchata

    Refrigerate the mixture for at least 2 hours to chill and allow the flavors to meld together.

Serving

    Serve the Horchata

    To serve, fill glasses with ice, pour the chilled horchata over the ice, and garnish with a sprinkle of ground cinnamon on top.
