Filling Preparation

Prepare the Filling
In a medium bowl, combine the cooked shredded chicken, cream cheese, shredded cheese, chopped green onions, ground cumin, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Prepare the Sauce
In a saucepan, heat the red enchilada sauce over medium heat until warm. Stir occasionally to prevent burning.
Assembly and Baking

Assemble the Enchiladas
Preheat the oven to 375°F (190°C). Take one flour tortilla and place about 1/3 cup of the filling mixture in the center. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

Add Sauce and Cheese
Pour the warm red enchilada sauce evenly over the assembled enchiladas. Sprinkle additional shredded cheese on top of the sauce.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

Serve
Remove the enchiladas from the oven and let them cool for a few minutes before serving. Garnish with additional green onions if desired.
