Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Make the Breading Mixture
In a large bowl, combine flour, cornstarch, salt, black pepper, paprika, and garlic powder. Whisk until well combined.

Soak in Buttermilk
Place the dried calamari rings in a separate bowl and pour buttermilk over them. Allow to soak for about 15 minutes.

Dredge the Calamari
After soaking, remove calamari from buttermilk and let excess drip off. Dredge each ring in the flour mixture, ensuring they are fully coated.

Heat Oil for Frying
In a large, deep skillet, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Sauté Garlic
Add minced garlic to the oil and sauté for about 1 minute, until fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Mix well.

Simmer the Sauce
Bring the sauce to a simmer. Reduce heat to low and let it simmer for about 15-20 minutes, stirring occasionally.
