    Prepare the Ingredients

    Start by preparing all sandwich ingredients, ensuring they are sliced and ready for assembly.

    Assemble the Sandwich

    Take two slices of bread and spread mayonnaise on one side of each slice. Layer with lettuce, tomato, and your choice of meats (BLT, Turkey & Swiss, Roast Beef, Pastrami, Tuna Salad, or Grilled Ham & Cheese).

    Grill the Sandwich

    Heat a skillet over medium heat and melt the butter. Place the assembled sandwich in the skillet and grill for about 3-4 minutes on each side until golden brown and the cheese is melted (if applicable).

    Serve

    Cut the sandwich in half and serve on a plate, optionally with chips or pickles.

    Sauté Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes until the vegetables are soft.

    Add minced garlic, bay leaf, thyme, salt, and pepper to the pot. Stir and cook for an additional 1-2 minutes until fragrant.

    Pour in the chicken broth. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.

    Taste and Adjust Seasoning

    Taste the soup and adjust the seasoning with more salt and pepper if needed.

    Remove the bay leaf and ladle the soup into bowls. Serve hot alongside the sandwich.
