Prepare the Filling

Combine Ingredients
In a large mixing bowl, combine the ground pork, shredded cabbage, grated carrot, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.
Assemble the Potstickers

Fill the Wrappers
Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the pork and vegetable filling into the center of the wrapper. Moisten the edges of the wrapper with water, fold it in half over the filling, and pinch the edges to seal. Repeat this process until all filling is used.
Cook the Potstickers

Pan-Fry
Heat a large skillet over medium heat and add 2 tablespoons of oil. Once hot, add the potstickers in a single layer (do this in batches if necessary). Cook for 2-3 minutes until the bottoms are golden brown.

Steam
Carefully add 1/4 cup of water to the skillet and cover immediately with a lid. Let the potstickers steam for about 5-6 minutes or until the water has evaporated and the potstickers are cooked through.

Crisp Up
Remove the lid and let the potstickers cook for an additional 1-2 minutes to crisp up the bottoms again.
Make the Orange Sauce

Combine Sauce Ingredients
In a small saucepan, combine the orange juice, soy sauce, brown sugar, cornstarch, and water. Whisk together until smooth.

Cook the Sauce
Place the saucepan over medium heat and bring the mixture to a simmer. Cook for 3-4 minutes until the sauce thickens, stirring frequently. Add crushed red pepper flakes to taste.
