For the Onion Rings

Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until well combined.

Add Sparkling Water
Slowly pour in the cold sparkling water while whisking until the batter is smooth and has no lumps. If the batter is too thick, add a bit more sparkling water.

Heat the Oil
In a deep frying pan or a heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Onion Rings
Dip each onion ring into the batter, ensuring it is fully coated. Carefully place the coated rings into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes per side.

Drain and Serve
Once golden brown, remove the onion rings from the oil and place them on paper towels to drain excess oil. Serve hot.

Combine Ingredients
In a medium bowl, combine the sour cream, mayonnaise, buttermilk, dried dill, garlic powder, and onion powder. Stir until well blended.

Season to Taste
Add salt and black pepper to taste, mixing thoroughly.

Chill and Serve
Refrigerate the dressing for at least 30 minutes before serving to let the flavors meld. Serve alongside the onion rings.
