Prepare Waffle Fries

Bake the Waffle Fries
Preheat your oven according to the instructions on the bag of frozen waffle fries. Spread the waffle fries in a single layer on a baking sheet and bake for the time specified until crispy and golden brown.
Cook Ground Beef

Brown the Beef
In a skillet over medium heat, add the ground beef. Cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes.

Add Seasoning
Drain excess fat from the skillet if necessary. Add the taco seasoning and water to the beef, stirring to combine. Simmer for about 5 minutes until the beef is well coated and the sauce has thickened.
Make Pico de Gallo

Combine Ingredients
In a mixing bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, and salt to taste. Stir well and set aside to let the flavors meld.
Assemble Nachos

Layer the Ingredients
Once the waffle fries are ready, place a layer of fries on a large serving platter. Top with the seasoned ground beef, followed by the pico de gallo, and then sprinkle the shredded cheddar and jack cheese evenly over the top.

Melt the Cheese
Place the assembled nachos in the oven for a few minutes (about 5) until the cheese is melted and bubbly.

Remove the nachos from the oven and drizzle with sour cream. Serve immediately.
