Preparation

  1. 1

    Prepare the Ingredients

Chop the onion, garlic, and bell pepper. Rinse and drain the beans and corn.

Cooking

  1. 2

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.

  2. 3

    Brown the Beef

Add the ground beef to the pot. Cook until browned, breaking it apart with a spoon, about 7-10 minutes.

  3. 4

    Add Spices

Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for another 2 minutes to toast the spices.

  4. 5

    Add Canned Ingredients

Add the diced tomatoes, kidney beans, black beans, and corn to the pot. Stir to combine.

  5. 6

    Add Broth and Simmer

Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low and let it simmer uncovered for 30 minutes, stirring occasionally.

Serving

  1. 7

    Serve the Chili

Taste the chili and adjust seasoning as needed. Serve hot in bowls, garnished with your favorite toppings like cheese, sour cream, or green onions.
