Prepare the Chicken
Cut the boneless chicken breast into bite-sized pieces. Pat them dry with paper towels.

In a shallow bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and onion powder. In another bowl, whisk together the eggs and milk.
Frying

Heat the Oil
In a deep frying pan or pot, heat oil over medium-high heat until it reaches 350°F (175°C).

Bread the Chicken
Dip each piece of chicken into the egg mixture, then coat it in the flour mixture, ensuring it's fully covered.

Fry the Chicken
Carefully place the breaded chicken pieces into the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

In a large mixing bowl, toss the fried chicken pieces with your choice of sauce until evenly coated.
