Prepare Potatoes
Preheat the oven to 400°F (200°C). Scrub the Russet potatoes thoroughly, then pierce each potato several times with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until tender. Remove from the oven and let cool slightly.

Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out the insides into a mixing bowl, leaving about 1/4 inch of potato in the skins. Add the butter, heavy cream, half of the Gruyère cheese, truffle oil, salt, black pepper, and chives to the bowl. Mash until smooth and creamy.

Spoon the potato mixture back into the potato skins, dividing it evenly. Top each stuffed potato with the remaining Gruyère cheese and a sprinkle of paprika.

Reduce the oven temperature to 375°F (190°C). Place the filled potatoes on the baking sheet and return them to the oven. Bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.
