Creamed Gnocchi

Cook Gnocchi
In a pot of boiling salted water, cook the gnocchi according to package instructions. Drain and set aside.

Make Cream Sauce
In a saucepan, melt butter over medium heat, add heavy cream, and bring to a simmer. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper.

Combine
Add cooked gnocchi to the cream sauce and gently stir to coat.

Prepare Gastrique
In a small saucepan, heat sherry vinegar and sugar over medium heat. Simmer until the mixture reduces and becomes syrupy, about 5-7 minutes.
Assembly

Plate the Dish
On a plate, place a serving of creamed gnocchi, top with sautéed shiitake mushrooms, and place the seared pork chop on top. Add fried Brussels sprouts on the side, drizzle with demi-glace and sherry gastrique, and garnish with crispy pancetta.
