    Season the filet mignon steaks with salt and black pepper. Heat a skillet over medium-high heat and add olive oil. Once hot, sear the steaks for 3-4 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes.

    While the steaks are resting, preheat your oven to 375°F (190°C). Place the sourdough slices on a baking sheet, rub each slice with a cut garlic clove, and drizzle with olive oil. Toast in the oven for about 5-7 minutes until golden brown.

    Spread a generous layer of herbed goat cheese on each slice of toasted garlic bread. Slice the rested filet mignon thinly and arrange on top of the goat cheese.
