Toast the Bread
While the steaks are resting, preheat your oven to 375°F (190°C). Place the sourdough slices on a baking sheet, rub each slice with a cut garlic clove, and drizzle with olive oil. Toast in the oven for about 5-7 minutes until golden brown.

Assemble the Tartine
Spread a generous layer of herbed goat cheese on each slice of toasted garlic bread. Slice the rested filet mignon thinly and arrange on top of the goat cheese.

Top each tartine with pickled red onion and a drizzle of balsamic vinegar. Sprinkle with crushed pink peppercorns for an added kick.
