Prepare the Chicken
Preheat your smoker to 225°F (107°C). Season the airline chicken breasts with salt, black pepper, and smoked paprika. Drizzle with olive oil and rub the seasoning into the meat.

Smoke the Chicken
Place the seasoned chicken breasts in the smoker and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Bake the Potatoes
While the chicken is smoking, bake the potatoes in the oven at 400°F (200°C) for about 45-60 minutes, or until tender. Let them cool slightly before handling.

Prepare Twice-Baked Potatoes
Cut the baked potatoes in half and scoop out the insides into a bowl, keeping the skins intact. Mix the potato flesh with butter, heavy cream, truffle oil, and Gruyère cheese. Spoon the mixture back into the potato skins and top with extra cheese.

Finish the Potatoes
Return the stuffed potatoes to the oven and bake for an additional 20 minutes, or until golden and bubbly.

Once the chicken is done smoking, let it rest for a few minutes. Serve the chicken with the twice-baked potato, asparagus, and blistered heirloom tomatoes drizzled with demi-glace.
