To Prepare the Grit Cakes

    Cook the Grits

    In a large pot, bring the water to a boil. Add the salt and slowly whisk in the grits. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until thickened.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat and stir in the butter and shredded Rico'a cheese until melted and well combined.

    Cool and Shape

    Pour the mixture into a greased 8x8 inch baking dish and spread evenly. Let it cool for at least 1 hour in the refrigerator until firm. Once chilled, cut into squares.

    Prepare for Frying

    In a shallow bowl, beat the eggs. In another bowl, mix the flour, cornmeal, and black pepper. Dip each grits square first in the egg, then coat with the flour mixture.

    Fry the Grit Cakes

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the grit cakes until golden brown, about 3-4 minutes per side. Drain on paper towels.
