Prepare the Cheesecake
Preheat your oven to 325°F (160°C). In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and sour cream, mixing until well incorporated. Then, mix in the vanilla extract, eggs (one at a time), and bourbon until the mixture is creamy and smooth.

Bake the Cheesecake
Pour the cheesecake mixture into a greased 9-inch springform pan. Place in a water bath and bake for 60-70 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for an hour. Then refrigerate for at least 4 hours or overnight.

Make the Caramel Sauce
In a saucepan over medium heat, combine 1 cup of sugar and 1/4 cup of water. Stir until the sugar dissolves, then stop stirring and let it boil until it turns a deep amber color. Remove from heat and carefully add 1/2 cup of heavy cream and 2 tablespoons of butter. Stir to combine and let it cool.

Prepare the Chocolate-Walnut Bri'le
In a separate bowl, combine 1 cup of chopped walnuts, 1/2 cup of chocolate chips, and 1/4 cup of sugar. Spread the mixture on a baking sheet and broil until caramelized, about 3-5 minutes. Watch closely to avoid burning.

Make Vanilla Chantilly
In a mixing bowl, combine 1 cup of heavy cream, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Whip until soft peaks form.

Assemble the Cheesecake
Once the cheesecake is cooled and set, drizzle with the caramel sauce, top with the chocolate-walnut bri'le, and serve with a dollop of vanilla chantilly.
