Method

Preparing Bhaji

Boil Vegetables

In a large pot, boil the potatoes, cauliflower, green peas, and carrots until tender (about 15-20 minutes). Drain and mash them together until smooth.

Sauté Aromatics

In a large skillet, heat 2 tablespoons of oil over medium heat. Add the chopped onions, ginger, and garlic. Sauté until the onions are translucent.

Add Vegetables

Add the finely chopped bell pepper, tomatoes, and the boiled and mashed vegetable mixture into the skillet. Stir well.

Season Bhaji

Sprinkle in the Pav Bhaji masala, turmeric powder, coriander powder, and salt. Mix well and cook for an additional 10 minutes, stirring occasionally.

Garnish

Remove from heat, garnish with chopped cilantro, and serve hot with lemon wedges.

Making Vegan Buns

Prepare Dough

In a large bowl, mix the warm water, sugar, and instant yeast. Let it sit for 5 minutes until frothy. Add the flour, olive oil, and salt, and knead until a smooth dough forms. Cover with a damp cloth and let it rise for about 1 hour or until doubled in size.

Shape Buns

Once the dough has risen, punch it down and divide it into equal portions. Shape each portion into a round bun and place them on a baking tray lined with parchment paper.

Second Rise

Cover the buns with a damp cloth and let them rise for another 30 minutes.

Bake Buns

Preheat the oven to 375°F (190°C). Bake the buns for 15-20 minutes or until golden brown.

Cool and Serve

Remove from the oven and let the buns cool slightly before serving with the Bhaji.
