Brine the Chicken
In a large bowl, combine sweet tea, salt, and black pepper. Add chicken breasts and marinate in the refrigerator for at least 4 hours or overnight.

Make the Steeped Honey Sauce
In a small saucepan, combine honey, sliced garlic, and cayenne pepper. Heat gently until warm, then let it steep for 30 minutes. Stir in apple hot sauce.

Make the Brioche Buns
In a bowl, mix warm milk and sugar, then add yeast and let it sit until bubbly. In a larger bowl, combine flour and salt. Add eggs and melted butter to the yeast mixture, then combine with flour. Knead until smooth, let rise for 1 hour, then shape into buns and let rise again for 30 minutes before baking at 375°F (190°C) for 15-20 minutes.

Fry the Chicken
Remove chicken from brine, dip in buttermilk, then dredge in flour mixed with cayenne pepper. Heat vegetable oil in a skillet over medium-high heat and fry chicken until golden brown and cooked through, about 7-8 minutes per side.
