For the Chicken Fried Onion Rings

Prepare the Onions
Peel and slice the onions into 1/4-inch thick rings. Separate the rings and set aside.

Soak in Buttermilk
Place the onion rings in a bowl and pour the buttermilk over them. Allow to soak for at least 30 minutes.

Make the Batter
In a separate bowl, mix together the flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

Coat the Onion Rings
Remove the onion rings from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture until well coated.

Fry the Onion Rings
Carefully place a few onion rings at a time in the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Serve
Serve hot with Rouille on the side.
