Duck Croquettes

Method

Preparation

  1. 1

    Prepare the Potatoes

Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth. Let cool.

  2. 2

    Make the Filling

In a skillet, heat a tablespoon of oil over medium heat. Sauté the chopped onion and minced garlic until translucent. In a bowl, combine the mashed potatoes, shredded duck confit, sautéed onion, parsley, salt, and pepper. Mix well.

  3. 3

    Form the Croquettes

Take a small amount of the mixture and form it into a small oval shape. Repeat with the remaining mixture.

  4. 4

    Coat the Croquettes

Dip each croquette into the beaten eggs, then roll in breadcrumbs until fully coated.

  5. 5

    Fry the Croquettes

In a deep skillet, heat vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

  6. 6

    Serve

Serve warm with sweet mustard on the side for dipping.
