    Make the Pasta

    In a large bowl, combine flour, eggs, and salt. Knead until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Marinara Sauce

    In a pot, simmer your house-made marinara sauce until thickened. Set aside.

    Make the Ricotta

    Mix ricotta cheese with a pinch of salt and pepper. Set aside.

    Prepare the Béchamel

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 2 minutes. Gradually whisk in milk and cook until thickened, about 5-7 minutes. Season with salt, pepper, and nutmeg.

    Roll out the Pasta

    Divide the rested pasta dough into 4 portions. Roll each portion thinly and cut into sheets to fit your baking dish.

    Layer the Lasagna

    In a greased baking dish, layer the sheets of pasta, marinara, ricotta, mozzarella, béchamel, and parmesan. Repeat until you have 15 layers, finishing with béchamel and parmesan on top.

    Bake the Lasagna

    Preheat oven to 375°F (190°C). Cover the dish with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden.

    Serve

    Let the lasagna cool for 10 minutes before slicing. Serve in a pool of marinara and top with dollops of ricotta. Accompany with seeded brioche rolls.
