Prepare the Brine
In a large bowl, combine sweet tea, salt, black peppercorns, smashed garlic, fresh thyme, and water. Stir until salt is dissolved.

Brine the Chicken
Submerge the chicken pieces in the brine. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Bake the Chicken
Remove chicken from the brine and pat dry. Place on a baking sheet and bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
