    Brine the Chicken

    In a large bowl, combine the sweet tea with the chicken breasts. Ensure the chicken is fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Sambal Oelek Mayonnaise

    In a small bowl, mix together the mayonnaise and Sambal Oelek until well combined. Set aside.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove the chicken from the brine, pat dry, and season with salt and pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). During the last minute of grilling, place a slice of Gouda cheese on each chicken breast to melt.

    Assemble the Sandwich

    Toast the burger buns on the grill for about 1-2 minutes. Spread the Sambal Oelek mayonnaise on the bottom half of each bun. Layer with lettuce, grilled chicken with melted Gouda, crispy bacon, and slices of heirloom tomato. Top with the other half of the bun.
