    Preheat the Oven

    Preheat your oven to 450°F (230°C).

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

    Cut in Butter

    Cut the cold butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Buttermilk

    Make a well in the center of the dry mixture and pour in the buttermilk. Stir gently until just combined; do not overmix.

    Shape the Dough

    Turn the dough out onto a floured surface and knead gently just until it comes together. Pat or roll it to about 1-inch thickness.

    Cut Biscuits

    Using a biscuit cutter or a glass, cut out biscuits and place them on a baking sheet lined with parchment paper.

    Bake

    Bake in the preheated oven for about 12-15 minutes, or until the tops are golden brown.

    Remove from the oven and let cool slightly. Serve warm with honey butter and your choice of jam.
