Make the Biscuits
Preheat the oven to 450°F (230°C). In a large bowl, mix flour, baking powder, baking soda, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn dough onto a floured surface, knead gently, and roll out to 1-inch thickness. Cut into rounds and place on a baking sheet. Bake for 12-15 minutes until golden brown.

Prepare the Chicken Sausage Gravy
In a skillet over medium heat, cook ground chicken until browned. Add sage, thyme, and black pepper. Stir in flour until well combined, then gradually add milk. Cook until thickened, stirring frequently.

Assemble the Dish
On a plate, split a biscuit in half, top with chicken sausage gravy, a fried chicken breast, a sunny egg, and garnish with pickled red onions and chopped green onions.
