Preparation
1. Marinate the Chicken
In a bowl, combine the chicken breast and achiote paste. Mix well to ensure all pieces are coated. Cover and refrigerate for at least 1 hour or overnight for best results.
2. Cook the Chicken
Preheat a grill or skillet over medium heat. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F). Remove from heat and let rest before chopping into bite-sized pieces.
3. Prepare the Baguette
Slice the baguette in half lengthwise. Spread sofrito on the inside of both halves.
4. Assemble the Sandwich
Layer the chopped achiote chicken on the bottom half of the baguette. Top with smoked red onions, Swiss cheese, shredded cabbage, and pickles. Close the sandwich with the other half of the baguette.
5. Press and Serve
Heat a panini press or skillet over medium heat. Place the sandwich inside and press down. Cook for 3-4 minutes until the bread is golden brown and the cheese is melted. Slice and serve hot.
