Preparation
1. Cook the Steak
Season the sirloin steak with salt and pepper, then grill or pan-sear to desired doneness (about 4-5 minutes per side for medium). Let it rest before slicing it thinly.
2. Prepare the Onions and Peppers
Slice the onion and serrano pepper. In a skillet, sauté the onion in a bit of oil until caramelized, about 5-7 minutes. Add the serrano pepper for the last 2 minutes of cooking.
3. Wrap the Hot Dogs
Wrap each Nathan's hot dog with 2 slices of center-cut bacon, securing them with toothpicks if necessary. Grill or pan-fry until the bacon is crispy.
4. Make the Black Garlic Aioli
In a small bowl, mash the black garlic cloves and mix them with the mayonnaise until well combined.
Assembly
5. Assemble the Dogs
Place each bacon-wrapped hot dog in a bun. Top with sliced sirloin steak, sautéed onions and serrano peppers, and a slice of provolone and mozzarella cheese.
6. Finish with Aioli
Drizzle the black garlic aioli over the top of each assembled cheesesteak dog before serving.
