Prepare the Garlic Confit

In a small saucepan, combine the garlic cloves and olive oil. Simmer over low heat for about 30 minutes, or until the garlic is soft and golden. Remove from heat and let cool.

Prepare the Fries

Peel and cut the Russet potatoes into wedges or sticks. Rinse under cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels.

Season the Fries

While the fries are still hot, toss them with garlic seasoning and salt to taste.

Make the Garlic Dip

In a bowl, mix together mayonnaise, garlic confit, and lemon juice until well combined.

Plate the garlic fries, sprinkle with chopped parsley, and serve with the garlic dip on the side.
