Cooking the Fries

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the frozen French fries according to package instructions until golden and crispy. Remove and drain on paper towels.

Making Cheddar Sauce

    Prepare the Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk until smooth. Add the cheddar cheese, salt, and pepper, stirring until the cheese is melted and the sauce is thickened.

Preparing Guacamole

    In a bowl, mash the avocados. Add lime juice, minced garlic, salt, cilantro, and diced tomato. Mix until well combined.

Making Chipotle Aioli

    In a small bowl, mix together the mayonnaise, chopped chipotle peppers, lime juice, and minced garlic until smooth.

Assembling the Dish

    On a large serving platter, layer the crispy fries. Drizzle with cheddar sauce, then top with guacamole, chipotle aioli, crumbled cotija cheese, bacon bits, and a dollop of sour cream.
