Prepare the Lamb

    Cook the Lamb

    In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for 1 minute. Then add the ground lamb, cumin, smoked paprika, coriander, salt, and pepper. Cook until the lamb is browned and fully cooked, about 8-10 minutes. Stir in chopped cilantro and remove from heat.

Make the Apricot Sauce

    Prepare the Sauce

    In a small saucepan, combine chopped dried apricots, water, honey, lemon juice, and cinnamon. Bring to a boil over medium heat, then reduce heat and let it simmer for about 10-12 minutes or until apricots are soft. Remove from heat and let cool slightly.

Serve

    Plate the Dish

    Spoon the cooked lamb mixture onto plates and drizzle with apricot sauce. Serve warm.
