Prepare Lamb

Cook the Lamb

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Spices

Add the ground New Mexico lamb to the skillet along with cumin, paprika, salt, and black pepper. Cook for 8-10 minutes, breaking up the meat with a spatula, until browned and cooked through.

Make Apricot Sauce

Cook Apricots

In a small saucepan, combine chopped dried apricots and water. Bring to a boil, then reduce heat and simmer for 10 minutes, until apricots are soft.

Blend Sauce

Remove from heat and stir in honey, lemon juice, and cinnamon. Use an immersion blender to blend until smooth, or transfer to a blender and blend carefully.

Serve

Plate the Dish

Serve the chopped New Mexico lamb on a plate and drizzle with the fresh apricot sauce. Enjoy!
