    Prepare the Prime Rib

    Preheat your oven to 450°F (232°C). In a small bowl, combine kosher salt, black pepper, garlic powder, and chopped rosemary. Rub the prime rib all over with olive oil, then generously season with the spice mixture.

    Roast the Prime Rib

    Place the prime rib, fat side up, in a roasting pan. Roast in the preheated oven for 15 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Rest for 20 minutes before slicing.

Au Jus

    Prepare the Au Jus

    In a saucepan over medium heat, combine the beef broth, red wine, and Worcestershire sauce. Bring to a simmer. In a small bowl, mix cornstarch with water until smooth and then whisk into the broth mixture. Cook until slightly thickened.

Popover

    Make the Popover Batter

    Preheat the oven to 425°F (220°C). In a mixing bowl, whisk together flour, eggs, milk, and salt until smooth. Let the batter rest for about 30 minutes.

    Bake the Popovers

    Divide melted butter among the muffin cups of a popover pan and heat in the oven for 5 minutes. Fill each cup 2/3 full with batter and bake for 20-25 minutes until puffed and golden. Do not open the oven door while baking.
