Preparation

Preparing the Stuffing

1. Sauté Vegetables

In a skillet, melt the butter over medium heat. Add the chopped onion and celery, and sauté until softened, about 5 minutes.

2. Combine Ingredients

In a bowl, combine the sautéed vegetables, diced butternut squash, crumbled cornbread, thyme, salt, pepper, and beaten egg. Mix well.

Preparing the Haddock

3. Preheat Oven

Preheat your oven to 375°F (190°C).

4. Stuff the Haddock

Place the haddock fillets on a baking sheet. Divide the stuffing mixture evenly among the fillets, pressing it down gently.

5. Coat the Haddock

In one bowl, place the flour. In another bowl, beat one egg. In a third bowl, place the ground pecans. Dip each stuffed haddock fillet first into the flour, then into the beaten egg, and finally into the ground pecans, coating well.

Baking and Making Sauce

6. Bake the Haddock

Bake the coated haddock fillets in the preheated oven for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.

7. Prepare Maple Cream Sauce

While the fish is baking, combine heavy cream, maple syrup, salt, and pepper in a saucepan over medium heat. Stir and cook until warmed through, about 5 minutes.

8. Serve

Once the haddock is done, remove it from the oven and drizzle the maple cream sauce over the top. Serve immediately.
