In a large bowl, whisk together flour, cornmeal, salt, and pepper. In another bowl, beat the eggs and mix with milk. Dip each haddock fillet first into the egg mixture, then into the flour mixture, ensuring it is fully coated.

Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded haddock fillets in batches until golden brown, about 3-4 minutes each side. Drain on paper towels.

Make the Guacamole
In a mixing bowl, mash the avocados with lime juice. Stir in chopped red onion, cilantro, and salt until combined. Adjust seasoning to taste.

Prepare the Slaw
Shred the green and red cabbage and mix with shredded carrots and diced apples in a large bowl. In a separate bowl, whisk together apple cider vinegar, olive oil, honey, salt, and poppy seeds. Pour dressing over the slaw and mix well. Let it sit for at least 30 minutes before serving.
