Season the Vegetables
In a large bowl, toss the chopped vegetables with olive oil, salt, black pepper, and balsamic vinegar until evenly coated.

Roast the Vegetables
Spread the seasoned vegetables in a single layer on a baking sheet or grill basket. Roast for about 15-20 minutes, stirring occasionally, until tender and charred.

Finish with Fresh Basil
Remove from heat and stir in fresh basil before serving.

Boil the Water
In a large pot, bring 4 cups of water to a boil. Add salt.

Add Cornmeal
Slowly whisk in the cornmeal, reducing the heat to low. Stir continuously to prevent lumps.

Cook the Polenta
Continue to cook for about 20-25 minutes, stirring frequently, until the mixture is thick and creamy.

Add Butter and Cheese
Remove from heat and stir in butter and parmesan cheese until melted and smooth.

Prepare the Garlic Butter
In a small bowl, mix softened butter, minced garlic, and chopped parsley.

Place under the broiler for 2-3 minutes until golden brown and crisp.
