Prepare the Chicken
Pound the chicken breasts to even thickness. Season with salt and pepper. Dredge each piece in flour, dip into beaten eggs, and coat with breadcrumbs.

Pan Fry the Chicken
Heat olive oil in a large skillet over medium heat. Add the breaded chicken and cook until golden brown and cooked through, about 4-5 minutes per side. Remove from skillet and keep warm.

Make the Sauce
Add fresh spinach to the skillet and sauté until wilted. Pour in heavy cream and Pernod, stirring to combine. Simmer for 3-4 minutes until the sauce thickens slightly.

Serve
Slice the bacon and add it to the sauce. Place the fried chicken on plates and top with the spinach and bacon Pernod cream sauce. Serve hot.
