    Prepare the Steak

    Remove the sirloin from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. Pat it dry with paper towels.

    Season the Steak

    Rub the steak with olive oil, then season generously with salt and black pepper on both sides.

    Heat a cast-iron skillet or heavy pan over medium-high heat until it is very hot.

    In the last minute of cooking, add the butter, garlic, and rosemary or thyme to the pan. Spoon the melted butter over the steak for added flavor.
