Method

Preparing the Beef Tenderloin

    Season and Sear

    Preheat the oven to 400°F (200°C). Season the beef tenderloin generously with salt and black pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side.

    Roasting

    Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium doneness, or until desired doneness is achieved. Use a meat thermometer to check the internal temperature (130°F for medium).

    Resting

    Remove from the oven and let the beef rest for 10 minutes before slicing.

Making the Demi Glace

    Simmering

    In a saucepan, combine beef stock, red wine, chopped onion, carrot, celery, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for about 30-40 minutes until reduced by half. Strain the sauce to remove solids.

Preparing the Crispy Fried Onions

    Coating and Frying

    Soak the sliced onions in buttermilk for at least 30 minutes. In a separate bowl, dredge the soaked onions in flour. Heat vegetable oil in a deep saucepan over medium heat. Fry the onions in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels.
