Mix the Stuffing
In a bowl, combine the sautéed vegetables, diced fire-roasted apples, dried cranberries, chicken broth, and pecan panko crumbs. Season with salt and pepper. Mix well and set aside.
Prepare the Chicken

Preheat the Oven
Preheat your oven to 375°F (190°C).

Stuff the Chicken Breasts
Using a sharp knife, create a pocket in each chicken breast. Stuff each breast with the prepared stuffing mixture and secure with toothpicks if necessary. Season the outside of the chicken with salt and black pepper.

Bake the Chicken
Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the juices run clear.
Prepare the Maple Cream Sauce

Make the Sauce
In a small saucepan over medium heat, melt the butter. Add the heavy cream and maple syrup, stirring continuously until the sauce thickens slightly, about 5-7 minutes. Season with salt to taste.

Plate the Dish
Remove the toothpicks from the chicken breasts if used. Serve the stuffed chicken drizzled with the maple cream sauce.
