Dough Preparation

    Make the Dough

    In a large bowl, combine all-purpose flour, caraway seeds, and salt. Mix well.

    Add Oil

    Add the oil to the flour mixture and rub it between your palms until the mixture resembles coarse crumbs.

    Knead the Dough

    Gradually add water, a little at a time, and knead to form a smooth and firm dough. Cover with a damp cloth and set aside for 30 minutes.

Filling Preparation

    Cook the Filling

    In a pan, heat a little oil over medium heat. Add cumin seeds and let them splutter.

    Add Onions

    Add chopped onions and sauté until they turn golden brown.

    Combine Ingredients

    Add ginger, green chili, boiled potatoes, green peas, coriander powder, garam masala, and salt to the pan. Mix well and cook for 5-7 minutes until the peas are tender.

    Finish the Filling

    Remove from heat and stir in fresh cilantro. Let the filling cool.

Assembling and Frying

    Roll the Dough

    Divide the dough into equal balls. Roll each ball into a thin oval or circle, about 6 inches in diameter.

    Shape the Samosas

    Cut the rolled dough in half to form two semi-circles. Take one semi-circle, and with your fingers, form a cone shape by folding it over. Seal the edge by pressing it together.

    Fill the Samosas

    Fill the cone with the potato and pea filling, then seal the open edge by pressing it firmly. Repeat with remaining dough and filling.

    Fry the Samosas

    In a deep pan, heat oil for frying over medium heat. Once hot, gently slide in the samosas, a few at a time, and fry until golden brown and crispy. Remove and drain on paper towels.
