Combine Vegetables
In a large mixing bowl, combine all the chopped vegetables. Mix them gently to ensure even distribution.

Make the Batter
In a separate bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, cumin seeds, and salt. Gradually add water and whisk until a smooth batter forms. The batter should be thick enough to coat the vegetables.

Heat the Oil
In a deep frying pan, heat the oil over medium heat until hot. You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle immediately.

Coat the Vegetables
Take a small handful of the mixed vegetables and dip them into the chickpea batter, ensuring they are well coated.

Fry the Pakoras
Carefully drop the coated vegetables into the hot oil. Fry in batches to avoid overcrowding. Fry until they are golden brown and crispy, about 4-5 minutes.

Drain Excess Oil
Using a slotted spoon, remove the pakoras from the oil and place them on paper towels to drain excess oil.
